Taco Soup


Today just seemed like a soup day. It was nice enough that we played and worked outside all day, enjoying the sunshine. As soon as the sun went down, it got COLD.


We were glad to be able to come in from working, and enjoy a hot bowl of comfort food. It was a super simple meal that didn’t dirty a bunch of dishes and didn't require a lot of attention.


We love dump type soups that you prep, walk away from, and come back later and enjoy.


You can make this lower carb by reducing the beans used, and make it grain free by taking iut the corn. it would still be yummy.


We serve ours with chips. We have corn chips for people who eat grains and siete grain chips for those who don’t.


 

INGREDIENTS 2 lb hamburger

1pkg ranch seasoning

1pkg taco seasoning

1 can corn

1 can rotel

1 can kidney beans

1 can pinto beans

1 can ranch style beans

1/2 lb velveeta cheese

DIRECTIONS

In a crock pot or large stovetop pot, Cook burger until browned.

Add in all other ingredients.

Cook on low for at least 30 minutes to blend flavors.
