Our premium beef tallow (FYI, tallow comes from beef. Lard comes from pigs.) is made from suet (kidney fat) and clean trimmings sourced from cattle raised on a 6 generation family farm in Oklahoma. We prefer a dry-rendering process in order to create a product that is as pure and natural as possible.
Our product is versatile for the chef, the baker, and yes, even the candlestick maker. The high smoke point (400) makes tallow the perfect oil for high-heat cooking without breaking down. In addition, for those who love creating their own skin products, the whipped version is always a favorite.
Here are a few of the amazing virtues of our beef tallow.
1. It is naturally pure: Our tallow is made from 100% natural beef fat from clean cattle. We do not use implants, hormones, steroids, or antibiotics in our cattle. Same goes with our tallow. We add no preservatives or artificial ingredients. Just pure, rendered fat.
2. It is dry-Rendered & Filtered: Some people prefer at least one wet render, but we prefer dry rendering. We take the extra time to dry-render and filter our tallow, multiple times so it’s as pure as it can be and has a minimal odor.
3. It’s handcrafted right on the farm: Freshness and quality are important to us so we produce our tallow in small batches right on the family farm. When you take home your bucket, it is leaving the farm for the first time. As a matter of fact, not only do we raise the cattle, but we also own and operate the facility where the cattle are processed. Our cattle are inspected and we adhere to all laws and practices which promote food safety and quality products.
4. It is versatile for multiple uses: Whether you're cooking, crafting or moisturizing, this natural solid tallow melts easily and can be whipped for a softer, fluffy texture. It’s great for everything from frying some good southern chicken to making candles or lotions.
5. It’s shelf-stable: Our tallow is stable at room temperature, but because light can degrade it, for the best results, store in a cool, dry, dark place. You can refrigerate it for longer shelf life but it will have a much harder consistency.
FYI, beef tallow does have a light odor to it. It smells like…beef. Every batch can be a little different in color, odor, and texture. It is the nature of the animal. Just remember, it is not the shortening that you grew up with that was created in a factory. This is the real beef fat which was created by nature and is so much more healthy.
We offer two textures, original or whipped. Original is just simply the tallow how it renders out. It will have a firm texture, similar to the skim of fat that you get on top of your roast broth if you put it in the refrigerator after cooking. It is harder and crips but melts easily. To whip it, we simply shave each tallow cake just like you would a chunk of chocolate then put it into your mixer and start whipping it. It takes several minutes but you will get a beautiful fluffy version that can be used in all the same ways as the original hard tallow. It basically looks like marshmallow cream. I love adding my jojoba, bees wax, and favorite essential oils to the whipped tallow to make balms, lotions, soaps, and candles. I can even infuse it with natural flavors and it makes a great Keto fat bomb for coffee.
Sizes: We offer two sizes of the pure tallow. A half gallon ($25), which is almost 4 pounds and a gallon ($50), which is almost 8 pounds. We use it to fry fish and it is wonderful. It does not make the fish taste like beef, I promise. It takes a gallon to fry fish.
Our whipped only comes in the half gallon ($20) container but it only weighs 36 ounces (2.25 pounds). It’s costs a little more but it takes double the amount of time to whip and jar it.
